CUCUMBER MARTINI

COOL AS A CUCUMBER MARTINI
Another way to use all those cucumbers in your garden!

Ingredients: Gin, Cucumber Juice, Cilantro, Lime, Simple Syrup, Cucumber, Sugar

When summer rolls around people who have gardens usually have cucumbers coming out their ears. There's so many cucumbers the poor gardener is forced into some form of pickling operation because there's so many cucumbers their neighbors run and hide when they see the hapless gardener approaching with a basket of green.

I do not grow cucumbers because of this. It pains me to grow something and then see it go to waste because I don't go in for canning or pickling - I'm lazy. I would much rather spend my time getting pickled!

So, when I answered my doorbell one day and there stood a neighbor with a sad little grin and a basket of cucumbers I smiled, took the basket and invited my neighbor in for a little education in how to properly dispose of excess "cucumbage".

I tossed a couple of martini glasses in the freezer, pulled out my juicer, a bottle of gin, some other fixin's and got to work. Fifteen minutes later my neighbor was enjoying her very first Cool As A Cucumber Martini and a smile had replaced her sad little grin.

Something tells me there's going to be a lot less jars of pickled cucumbers in the neighborhood this year.
