THE GAZPACHO MARTINI
Say "Hola" to "Bueno".
Ingredients: Tomato Vodka, Pico De Gallo Juice*,Sparkling Water, Cholulua Lime Hot Sauce, Cilantro, Lime, Cucumber, Kosher Salt
I made tacos for dinner one night and I always make my fresh Pico De Gallo to top them off. I love the freshness of Pico De Gallo as opposed to all those salsas in a jar. I made a little too much, as usual, but this extra gave me an idea for a new martini!
I took a good cupful of the Pico De Gallo and turned it into a juice, added some tomato vodka, lime juice, some special hot sauce, cilantro and a splash of club soda-sparkling water and some fun fresh veggie garnish and created the Gazpacho Martini!
This martini has just become one of my top three favorites! It's not as heavy and filling as my Bloody Martini or my BLT Martini and not as spicy as my Blood and Guts Halloween Martini. It really tastes like a nice cold bowl of Gazpacho Soup with a kick, making it a great cocktail to serve with any Spanish or Mexican foods or appetizers! It's really beautiful with all the flecks of tomato and cilantro floating in it and the drops of hot sauce that settled at the bottom.
It's really important to the flavor of this martini to use my Pico De Gallo recipe - the cucumber is absolutely the taste that puts the 'great in this gazpacho martini.
