THE MISSISSIPPI MUD PIE MARTINI Here's MUD in your eye!* Ingredients: Kahlua, Coffee Vodka, Chocolate Vodka, Bailey's, Coffee Ice Cream, Half & Half, Oreo Cookies, Coffee Beans, Cocoa Powder, Sugar, Chocolate Syrup The traditional Mississippi Mud Pie dessert got it's name from the similarity of the dense chocolate cake which was originally the base of a World War II era dessert that originated in Mississippi. The dense cake was said to resemble the mud at the banks of the Mississippi River. Popular in the days after the war because of it's simple ingredients which could be found in most households (butter, cocoa, flour, sugar, eggs, salt) this cake/brownie like dessert morphed into more of a pudding pie and ice cream pie in the following decades. Where the original Mud Pie recipes used cake, today's modern versions are most commonly made with Oreo cookie crusts topped with coffee ice cream, whipped cream, chocolate syrup and sometimes some nuts. This ice cream version is the one I first came in contact with and it is the inspiration for my Mississippi Mud Pie Martini. No nuts, I don't like rocks in my mud! * The Origins of the drinking toast "Here's Mud in Your Eye" by the Reverend Dr. Byron E. Shafer, of Rutgers Presbyterian Church. (Now this is MY kind of preacher - gotta love a man of God who gets curious about an obscure drinking toast!
