THE PINEAPPLE UPSIDE DOWN MARTINI Tropical martini meets a family favorite dessert cake! Ingredients: Vanilla Vodka, Pineapple Juice, Pineapple, Maraschino Cherries Pineapple Upside Down Cake was a popular dessert when I was a kid. Mom made it on a weekly basis and I still remember the strong vanilla from the cake and the sweet, tart taste of the pineapple. I always stole the Maraschino cherries if I got the chance and come dinner time the cake had empty little red stains as evidence of my crime. Uh oh, I sure hope there's a Statute of Limitations on stealing cherries! This Pineapple Upside Down Cake Martini really reflects those same flavors. If you like the dessert you'll like this martini. Though it seems like this dessert has been around forever, it only became possible to most of the world after Jim Dole of the Hawaiian Pineapple Company (now Dole Pineapple) perfected a way to can pineapples in 1903. When The Hawaiian Pineapple Company ran an ad campaign featuring a recipe for Pineapple Upside Down Cake the dessert went mainstream. Upside down cakes made with cherries and other local fruits have been around since the middles ages where they were baked in cast iron skillets on stove top.
